Kaju Katli Recipe

Kaju katli is royal Indian sweet, vegan cashew fudge, rich melt in mouth with just few ingredients.

Ingredients
  • 1 cup Kaju/cashews
  • 1 cup powdered sugar
  • ½ tsp cardamom powder
  • ⅛ tsp saffron(optional)
                       


Instructions
  • Start with soaking the cashews in water for 30 minutes.
  •  Now grind the soaked cashews to a very fine paste.
  • Take a non-stick pan add cashew paste and powdered sugar, mix well.
  • Now heat the mixture over medium flame and stir. Add saffron and mix well.
  • Keep stirring for 7-10 mins till the mixture thickens.
  • When the mixture start to form lumps, gather in the center.
  • Take a very small amount of mixture and make a ball with your fingers. If you are able to form a ball, this is correct consistency of the mixture.
  • Now switch off the flame and let the mixture cool for a while.
  • Once the mixture cool down, start to roll the dough into a ¼ inch thick circle
  • Now make diamond shaped pieces with the help of a knife.
  • Lastly, allow the pieces to set for 10 minutes.
Kaju Katli is ready to eat.
